Earth Day Denim Upcycle

Spring is here! That means it’s time for one of my absolute favorite activities—spring cleaning. There’s nothing like opening all the windows and doors and soaking in the fresh April breeze while scrubbing the house to prepare for a new season. Getting my closet in order is always my first task. If you’re like me, you may have a difficult time tossing clothes. Sure, I may sell the occasional item or two at a garage sale or take a few trash bags of old T-shirts to Goodwill, but I have a tendency to hang on to clothing just in case.

Just in case I may need them…just in case they may come back in style someday…just in case I may want to pass them down to my own children….just in case they are worth some cash. You get the idea. But for the most part, the items that I find myself most attached to are those that no longer fit but have been favorites at one point or another.

Juice: Fall Loaf

I cannot even begin to tell you all how excited I am to share this recipe because growing up nothing ever went to waste. As you can imagine, wasting good juice-pulp can be torturous on me. Yes—it makes great compost, and one day in the near future, it’ll be awesome chicken feed, but there aren’t a lot of options out there for this organic goodness. I started racking my brain and combing through recipes that use a food processor, since a juicer’s pulp produces the same result. Plus, it’s economic and efficient: You save time in the kitchen, and get two meals for the price of one. Beef Gyros with Tzatziki Sauce

Nothing excites me more than the sound of food trucks honking their horns. It reminds me of growing up on the Border and walking over the bridge into Mexico, and the waft of spices coming from those street vendors was always so intoxicating.  On Friday nights, we’d cross the bridge and walk up and down the Strip with our flautas, gorditas, tacos, and burritos soaking through the flimsy cardboard containers they put them in.  And living in Europe just a couple years later— with all the late night street vendors lined up outside the discothèques—always reminded me of home.  Now, I prefer to know where my meat comes from!  But in all seriousness, I enjoy recreating those street-vendor nights with healthier versions of some of my favorites. My husband and I spread out a picnic, munch on our street food, and watch a little football. Today on The Monday Menu, cook up some street food—Greek style!
