I absolutely LOVE fall. There’s something about that feeling when you step outside and turn right back around to grab a sweater. That first chill of the season draws a rush of excitement from me. I crave coffee, not only to wake me up, but to warm me up, which means I also crave big mugs of steaming soup.

Recently, in an attempt to tame our sugar dragons, my husband and I completed the Whole30. And, while weren’t entirely successful at giving up wine, we did manage to go without added sugar, dairy, and grains for a month. During the process we discovered a love for sweet potatoes and Ghee (clarified butter). Today’s recipe, my spicy baked-sweet potato soup, includes both.

Marzia’s Pumpkin Pie Smoothie

Jack-o’-lanterns aren’t just for carving. They’re for eating too! I don’t know about you, but I love pumpkin season. It’s that time of year where it’s pumpkin everything—pumpkin spice latte, pumpkin pie with whipped cream, and pumpkin pie smoothies. Yep, you read that right…pumpkin pie smoothies. Here in Texas, fall is pretty warm until November. So a cold pumpkin pie smoothie on hot fall day gets me in the holiday spirit.

Besides the wonderful taste pumpkin has, nutritionally, it gives you a reason to eat or drink it even more. Pumpkins’ orange color means they’re loaded with the antioxidant beta-carotene, which is one of the plant carotenoids converted to Vitamin A in the body. Vitamin A is essential for healthy, glowing skin, strong eyesight, and our immune system. Pumpkins are also high in vitamin C. With cold season around the corner, this is just the protection we need.

This pumpkin pie smoothie will bring that fall feeling with every sip you take. so break out the blender and mix one up this season!

Zucchini Blueberry Pancakes

Last month, Holly’s Rise And Shine Breakfast Bakes had me craving breakfast for dinner. Only problem is, I don’t want an overwhelmingly high amount of calories that I’m going to have to work off for the next week because Mama wants stuff like French toast, pancakes, or Roscoe’s chicken and waffles. It’s just not worth this one meal. Unless, of course, breakfast is approached in a different way—healthy, yet tasty.

That might sound lame, but being a mom has changed my outlook on so many things. Now, I’m always looking for better, healthier options because I want Darlington growing up already a step ahead when it comes to eating healthy. That’s one half of the equation. “You can’t work off a bad diet,” Marzia always says.
