For most people the words “healthy” and “vacation” do not go together.

I get it. You work hard so you want to play hard. But depending on how long your vacation is, it’s not a reason to go on a super binger and be lazy. The pounds will catch up to you, and the aftermath is not so much fun. You can easily eat 3000 calories in one meal, but it will take more than a week to work that off! This isn’t meant to be harsh because, believe me, we’ve all been there.

My alarm went off at nine in the morning. Our hotel room was frosty. That seems to be the one reliable thing about cheap accommodations—the ACs only have two settings, freezing or sweltering.

Kolbe—associate editor of Texas Towns Revealed, one of my good friends, and current travel buddy—slept in the other bed. Her dog, Mowgli, a Chinese Crested, must’ve heard my alarm because he rustled around in his kennel. Soon we were all out of bed, wiping the sleep from our eyes, awake in Tyler, TX. Finding Love in Scotland

In 2008, I participated in a work exchange program called BUNAC, and chose to reside in Edinburgh, Scotland. I chose Edinburgh because my best friend Erika would be studying at the University of Edinburgh, and because we adored the Outlander series by Diana Gabaldon. Ever since we were fourteen years old, we dreamed of living in Scotland together. Unfortunately, I didn’t find my own personal Jamie Fraser, but I did find a deep and lasting love for a city and a country that have become a home away from home.
