This authentic Mexican meal has a history of long-held tradition and is tied in with local folklore. It also happens to be easy to make. Every time I go home, it’s on my shortlist of home-cooked must-haves.
Chile Colorado is considered good luck (much like menudo). It’s usually reserved for holidays and special occasions, but it’s also known to cure colds and hangovers. Your friends and family will love the tradition and the flavor!

Ingredients
- 1 package of whole dried chili peppers
- 1 garlic clove
- 1 cup of water
- 1 tsp onion powder
- sea salt
Ingredients for Chile Colorado - 4 lbs lean pork sirloin
- 2 cups red chili sauce
- 2 tsps cumin powder
- 2 tsps onion powder
- 4 garlic cloves minced
- sea salt
- 5 large potatoes
- water
Instructions
- Remove stems and seeds from whole dried chili peppers.
- Soak seedless, stem-less whole dried chili peppers in very warm water until they’re soft.
- Once soft, place 10 peppers in blender with clove and 1 tsp onion powder.
- Add 1 cup of water and blend until mixture has the same consistency as tomato sauce.
- Add salt to taste.
- *Repeat the above process until all the chili peppers are gone.
