Erica’s Blueberry Pecan Almond Granola

Ever since joining the AdvoCare family last year as the spokeswoman for their skincare line, SYS, I’ve been overwhelmed by the love and support shown to me by fellow AdvoCare enthusiasts. Along the way, I met Erica Monroy via Instagram. She shares delicious recipes, adorable photos of her family, and always leaves wonderfully supportive comments for others. Today, she’s sharing one of her favorite snack recipes for blueberry pecan almond granola. It’s yummy and healthy and makes your house smell amazing! 

For this week’s Monday Menu recipe, please welcome Erica Monroy!

Erica's Blueberry Pecan-Almond Granola

Serves: 1 pint
Ingredients
  • 2 cups of oats
  • 2 cups blueberries
  • 1 cup sliced almonds
  • 1 cup partially crushed pecans
  • ¼ cup flax seed
  • ¼ cup honey (give or take)
  • 2 tbsp ground cinnamon
Instructions
  1. Preheat oven to 250.
  2. Mix ingredients together in a medium mixing bowl.
  3. Spray a shallow (9x12 or bigger) pan with the nonstick spray of your choice.
  4. Spread out the granola evenly in the pan.
  5. Place in oven and prepare to smell the wonderful aroma!
  6. Stir and turn over granola every 10 minutes or so, allowing it to bake evenly.
  7. Bake between 35-40 minutes or until nice and golden then remove from oven.
  8. Once it has completely cooled, store in a pint size mason jar.

I paired 1/3 cup prepared granola with about 1/3 cup fat free organic Greek vanilla yogurt, but the pairing is endless. It’s also good to just eat it alone!

As far as nutrition facts go, it’s about 200-ish calories for this yummy snack (the way I like it anyways).
