Thai Basil Chicken

It’s the beginning of the year again and time for fresh starts and best behaviors.  So what’s better than a quick, healthy meal to help drop those pesky holiday pounds.  This meal is a favorite in my family, and hopefully, it’ll become one in yours too.

Thai Basil Chicken

Ingredients
  • 6 tbsp. sesame seed oil
  • 2 tbsp. minced fresh garlic
  • 2 tbsp. minced fresh garlic
  • 2-4 tbsp. minced Thai chili pepper
  • 16 oz. ground chicken breast
  • 1 cup chopped white mushrooms
  • 3 tbsp. fish sauce
  • 3 tbsp. oyster sauce
  • 1 tbsp. agave nectar
  • 1 tbsp. sweet soy sauce
  • 1 cup chicken broth
  • 1 cup chopped red or yellow bell peppers
  • 1 cup basil paste
  • 1 cup finely chopped cilantro
  • salt to taste
Instructions
  1. In a small bowl, whisk together fish sauce, oyster sauce, agave nectar, sweet soy sauce, and chicken broth.
  2. In a wok or skillet, heat sesame seed oil on high heat.
  3. Add minced garlic until its golden brown.
  4. Then, mix in Thai chili pepper.
  5. Add ground chicken and make sure to stir thoroughly to keep from clumping.
  6. Cook chicken about halfway through.
  7. Reduce heat to a medium.
  8. Stir in mushrooms and bell peppers.
  9. Now, slowly work in previously prepared sauce mixture.
  10. Once everything is cooked thoroughly, add in basil paste and chopped cilantro.
  11. Add salt to taste.
Notes
Serve with jasmine rice for more of a complete meal.
