Courtney’s Cilantro Key Lime Pie

Okay, y’all, I’m usually a fancy dessert person. Think crème brûlée, tiramisu, and île flottante, but this pie—this pie!—I might love it a tiny bit more than any dessert I’ve ever had. It’s super light, and the cilantro counterbalances the extreme tartness of the limes, giving it a unique but addictive flavor.

Cilantro-lime is a pretty popular flavor combo these days, especially in the Southwest, but I’d never really thought of making it into a dessert until I went to an Austin ice cream parlor called LICK. They have the most imaginative flavor combos, things like strawberry basil, lemon lavender, and goat cheese thyme & honey. One of their seasonal flavors is cilantro lime. When I took my first taste, I about fell on the floor. It was that scrumptious! The cilantro sneaks into the palette so subtly, but it’s just enough to tantalize you and drive you crazy with how delicious it is.

Cilantro Clarity

My husband and I have been avid juicers now for the last 4 years, and the health benefits have been amazing. It’s one thing to feel great, and it’s a whole different thing to actually see the results on our stress tests and yearly physicals—proof that this lifestyle change has had a big impact on our lives. I’m also convinced that juicing helped keep me from getting morning sickness after reading studies about its prevention coupled with cardio. Obviously, I’m no baby-making expert yet, but I do believe that if we all juice for health and not just juice to juice, we’ll see the biggest personal dietary gains.

Juice: Sour Pineapple

Nothing brings me back home to New Mexico and my summer job, lifeguarding at Wet ‘n’ Wild, than the great taste of Green Apple Jolly Ranchers.  I’d sit there for hours getting my candy fix with the feeling of the sun on my cheeks and the breeze on my warm skin.  That was summertime fun; I was young, and nothing was better than getting a tan and being paid for it.  Here’s to the summers of our youth.
