Strawberry Romanesco Broccoli

If you’re not a big foodie, then you might be wondering what that Willy-Wonka-like vegetable seen in the ingredients photo is.  Well, Romanesco Broccoli is an edible flower. Though its name says broccoli, it’s in fact more of a cauliflower, rich in zinc, high levels of carotenoids that promote glowing skin, iron, vitamin C, and folate.

Folate helps combat anemia and encourages a healthy reproductive system.  Because of these amazing and diverse health benefits, I tried incorporating the Romanesco broccoli into my prenatal diet.  This might seem like putting a lot of stock into juicing, but our diet is one half of a healthy lifestyle, and obviously, the other half is exercise.

They must both be maintained for optimal health, and even more so during and right after pregnancy, because as pregnant women and new mothers, our levels are all out of whack—going from sustaining a singular life, then doubled to promote a new life, and back to a singular life. Another factor that gets us out of whack is that we may or may not be making breast milk to further nourish this little being.

Now, that doesn’t mean we have to go crazy and start eating for two adults, but rather, we should make slightly healthful changes, while realizing that this little life will drain us of our best and leave us deficient in certain properties.  That said, we are responsible for maintaining the rest.  It’s important to seek out superfoods that make up where we lack. You can find Romanesco broccoli at your local Whole Foods.

For all you moms, moms-to-be, and recent moms, Strawberry Romanesco Broccoli is the perfect transitional juice for you.

Strawberry Romanesco Broccoli

Ingredients
  • 1 large box of strawberries
  • 3 Romanesco broccoli
  • 4 lemons
  • 6 limes
  • 14 oranges
  • 1 small box of mint
Instructions
  1. Wash strawberries, broccoli, lemons, limes, oranges, and mint.
  2. De-stem strawberries.
  3. Chop up broccoli into juicing-sized pieces.
  4. Peel lemons, limes, and oranges.
  5. Save some mint to garnish.
  6. Toss all other ingredients into juicer and activate.
  7. Stir and serve.
